The 1950s

Dottie's Glazed Meatloaf

Soaking the breadcrumbs in milk first is what keeps it tender. The sweet, tangy glaze does the rest.

  • Serves 6–8
  • Prep 15 min
  • Bake 1 hr 10 min

Every Wednesday in 1956, my mother made this meatloaf, and every Wednesday my little brother tried to sneak the crispy glazed corner before Daddy got home. He never once got away with it. I still save that corner for whoever gets to the kitchen first.

Ingredients

For the meatloaf

  • 2 lb ground beef (80/20)
  • 1 cup fine dry breadcrumbs
  • ¾ cup whole milk
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt, ½ tsp pepper
  • 2 tbsp chopped fresh parsley

For the glaze

  • ½ cup ketchup
  • 3 tbsp packed brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp cider vinegar

Method

  1. Heat the oven to 350°F (175°C).
  2. In a large bowl, stir the breadcrumbs into the milk and let them soak for 5 minutes.
  3. Beat in the eggs, then add the onion, Worcestershire, salt, pepper and parsley.
  4. Add the beef and mix with your hands just until everything is combined. Don't overwork it.
  5. Press into a 9×5-inch loaf pan, or shape a loaf on a rimmed baking sheet.
  6. Stir the glaze ingredients together. Spread half over the top.
  7. Bake 45 minutes. Add the rest of the glaze and bake 20–25 minutes more, to 160°F inside.
  8. Rest 10 minutes before slicing so it holds together.

Dottie's tip: A cold slice on white bread with extra ketchup is the best next-day sandwich.
