TV-Night Salisbury Steak

The homemade version of that famous frozen dinner, and ten times better.

Friday nights were TV-tray nights at our house. The kids begged for the frozen dinners from the store, so I started making my own Salisbury steak and serving it on divided plates. They never knew the difference, except that they always asked for seconds.

Ingredients

For the steaks

  • 1½ lb ground beef
  • ½ cup dry breadcrumbs
  • 1 large egg
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt, ¼ tsp pepper
  • 1 tbsp vegetable oil

For the gravy

  • 2 tbsp butter
  • 1 onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp ketchup

Method

  1. Mix all the steak ingredients except the oil. Shape into 4 oval patties about ¾ inch thick.
  2. Heat the oil in a large skillet over medium-high heat. Brown the patties 3–4 minutes per side. Set aside. They'll finish cooking in the gravy.
  3. Lower the heat to medium. Melt the butter and cook the onion and mushrooms 6–8 minutes until soft and golden.
  4. Sprinkle in the flour and stir for 1 minute.
  5. Slowly whisk in the broth, then the Worcestershire and ketchup. Bring to a simmer.
  6. Return the patties, spoon gravy over them, cover and simmer on low for 10–12 minutes, until the centers reach 160°F.
  7. Serve with mashed potatoes and plenty of gravy.

Dottie's tip: Wet your hands with cold water before shaping the patties and the meat won't stick.
